Our little, 3-and-a-half-year-old boy was really good all day yesterday. Those days are rare and yesterday was one of those days! So, when he said he would like to make muffins in the evening, I just said YES. We didn’t have many ingredients around, so I took this recipe and made it into muffins. 4 ingredients are all you need to make them. The (new) recipe is below.
Ingredients (for 24 muffins): 5 eggs, 5 tablespoons brown sugar, 5 tablespoons flour and berries – I used 1 cup raspberries and blackberries.
Instructions: Beat the egg whites until foamy, then add the yolks and beat until well blended. Add sugar and beat well. Add flour and stir well with a tablespoon. Add berries and spoon into prepared muffin tins. Bake at 180 degrees C (360 degrees F) for about 15 minutes.
And now… Little guy doesn’t like these muffins. He says they’re too sour for him. Anyway, I think he just wanted to be a little creative in the kitchen with his mom. Others have liked them, including me.
